Belarus embraces yellow potatoes as nutritional awareness grows over decades

Previously, most Belarusians preferred potatoes with white flesh.

Why is yellow-fleshed potato healthier than white-fleshed potato and when did the trend towards it start, was discussed on STV channel by the general director of the Scientific Practical Center for Potato and Vegetable Growing of the National Academy of Sciences of Belarus, **Valadim Makhanio**.

According to him, yellow potatoes contain more beneficial substances than white ones.

"Yellow potatoes have more vitamin A. The protein in potatoes is absorbed faster from boiled potatoes than from eggs," noted Valadim Makhanio.

The scientist also mentioned that yellow-fleshed potatoes have more carotene.

"About 40 years ago, most Belarusians preferred white-fleshed potatoes, which are very starchy. But since the mid-80s, attention has been paid to yellow flesh," emphasized the specialist.
