Natural birch sap has a distinct appearance and taste. It ranges from clear to slightly cloudy with a faint pinkish-brown tint. The flavour is mildly sweet with hints of wood, and there should be little to no aroma. Any product that looks crystal clear, has a sour aftertaste, or lacks an expiration date may be fake.

Before reaching shelves, genuine birch sap undergoes strict lab testing. Checks include organoleptic properties, foreign impurities, dry matter content, and heavy metal levels to comply with GOST standards. Packaging also matters—glass bottles are ideal, as carton containers allow air in, encouraging microbial growth, while plastic can release harmful compounds.
