Emily English's So Good Cookbook Redefines Quick, Healthy Meals
Emily English, a 28-year-old nutritionist with 1.5 million Instagram followers, has released a new recipe book named So Good. The publication, priced at £17.26 and issued by Seven Dials, has already been recognised as the year’s best healthy cookbook. English brings both professional kitchen experience and a degree in nutrition from King’s College London to her work. English’s background includes years spent in professional kitchens, including her grandmother’s restaurant. This hands-on experience shaped her approach to cooking—simple, fast, and nutritious.
One standout recipe from *So Good* is the Tuna Melt, designed for a single serving. It takes just 10 minutes to prepare and contains under 535 kcal with 36g of protein. The dish replaces traditional mayonnaise with a lighter, high-protein yogurt mix. The recipe calls for 60g of drained canned tuna in brine, 1 chopped spring onion, 1 tablespoon of capers, and 40g of mature Cheddar cheese. Flavour comes from extra virgin olive oil, garlic, and parsley. Cooking is flexible: either in an air fryer at 200°C (400°F) for 5 minutes or in a dry frying pan over medium heat for the same time.
English’s book offers practical, protein-rich meals that fit busy lifestyles. The Tuna Melt, like many of her recipes, balances speed, nutrition, and flavour. So Good is now available for those looking to cook healthier without sacrificing taste.
